Hi,
I was wondering if there's a way to get the S2 models output to work on a phone with some type of adapter. Get the stereo signal to combine into one line via adapter so it could work.
And likewise, if there's some way to use the C model to where it can plug into a PC or a voice recorder and record the mono-line.

Yes, it is possible to get the S2 model output to work on a phone. Here's a blog post that describes how to record calls in stereo using iPhone: https://recapmycalls.com/how-to-record-binaural-or-stereo-sound-calls-on-your-iphone-and-ipad/ Similar method should also work for Android phones, but I have not yet tested.
If your device already has a stereo microphone input, or you can add one using an adaptor, go with RECAP S2. S2 records each side of the call in separate channels. I don't recommend downgrading to mono and using Model C.
